Vegan Peanut Butter Cookies
2 cups whole wheat flour (or spelt)
1 tsp baking soda
1 cup natural peanut butter
3/4 tsp kosher salt
3/4 cups of honey (or maple syrup)
1.5 tsp vanilla
1/4 cup almond milk (or coconut milk)
1/4 cup extra virgin olive oil
Preheat oven to 350'. Mix dry ingredients in bowl. Mix wet ingredients in seperate bowl. Add dry ingredients slowly to wet ingredients. Bake for 11 minutes.
Yields 26 cookies
