I really don't like to clean..

...my house. END

Though, everytime I rarely do it I feel really great afterwards. If only I could have the motiviation to clean it more often than ti wouldnt take half as long to clean it. Oh, the things we know but still end up procrastinating anyways. Well I thought I would post a very delicious recipe I have made a couple times and will be making tonight. It is not the healthiest of my recipes but it is super delicious.
Homemade Chicken Strips :)

Homemade Chicken Strips

Ingredients:
1 cup of ranch dressing
1 1/2 cup of flour
1 lb of chicken cut in strips
3 teaspoons of Lawry's seasoning
1 teaspoon Cayane Pepper
1 cup (or more) of Extra Virgin Olive Oil

Directions:

Soak your chicken strips in a bowl with your 1 cup of ranch dressing for about 20 minutes

After this is done, pour olive oil into frying pan and heat on medium until it is super hot and boiling

In seperate bowl add flour, Lawry's Seasoning, Cayanne pepper

Add ranch to dry mixture and mix with fork (will not mix perfect and isnt meant too.

1 at a time coat each chicken strip in batter

pour in fryer and cook until golden brown all the way around

A Fairytale

I feel like I am living a fairytale right now. I married my best friend..I have a beautiful daughter..and a wonderful life with supportive family and friends. It seems like just yesterday I was a young girl all alone in Oregon thinking I would never find true love. A year of ordering domino's and watching redbox movies finally paid off when I ran into the love of my life one day. I am so happy to start my life. :)

I just walked by Sophie's room and she had her baby (doll) in her arms and she looked down and clear as day said, "Baby, I Love You". :)

Makes my heart melt...

This three day weekend coming up is going to be the best weekend...I just know it.

Backyardigans

This weekend we plan to completely lanscape the backyard. Maybe If I am daring I might post a before picture...who knows.

I have had a lovely little break from work (minus being sick) and must say I feel completely refreshed to go back today. It will be a little sad though because two of my favorite co-workers left last week..so it won't be the same.

Sophie is in such a better mood since my mother put her on acidophilus. We had a bit of a scare at the urgent care center last week. We went in because we believed she just had a bad case of thrush. Well the doctors threw the "C" word at us (cancer) and told us to come back in a week if it wasnt gone and they would run the tests to see if she had mouth cancer. I seriously hate doctors for this. So we wont home and my extremely intelligent PHD mother insisted it was some form of bacterial thrush and put her on acidophilus...within three days it was gone.

So to repeat....I hate doctors

What I want to be when I grow up :)

I am one of those people who constantly changes her mind. I have a hard time figuring out how to place all of the things I love into one job. So I made up something of my own. It is a little different but I love it. My plan is to open up my own business in Oly in 5 years. when you walk in the front part of the business will be a childrens store, selling my own stuff plus other local children/ babies supplies with an empthasis in organic/ natural/ homemade etc. I plan to become a certified LCCE and IBCLC. Those two things are a certified childbirth educator and a certifed lactation  consultant. So the back building attached to my business will be a huge studio that teaches lamaze and breastfeeding classes .:)

Hormones, hormones, hormones

Can't live with em..can't live without em!

But seriously..today has started out rough. I woke Sophie to find she had slept in poo all night all over her bed. I just don't get how the child can be quiet about that. I would be flipping out if I pooped! So I plopped her into the bathtub as the mess was not meant for a one man job. lol Maybe it is just me..but I am feeling overly emotional today and know it is due to those lovely hormones us women get right before that son-of-a-B**** Aunt Flow arrives. It is so hard to describe the feeling to men but PMS is pretty much awful. You feel like you look. Your angry because your bloated..and your bloated because your angry.

Anyways I want to keep promoting things (healthy things) and this is totally off topic but I want to talk about promoting your local farmers! For all of those people in the Lewis County area..I strongly suggest going to the new local veggies store by sunbirds. They sell all of our neighbors fresh veggies, fruit, etc. On top of it they sell my most FAVORITE of things..Lattins Cider Mill Cider :) It comes from a lovely little farm in Tumwater/Oly area. Give this store a try..you won't regret it

Healthy Version of Zucchini Bread

I really try to bake with organic or natural products as I do not believe in baking with over-processed or refined sugary ingredients. So if you want to give this recipe a try I swear you wont regret it :)

Zucchini Bread

3 and 1/4 cup flour (whole-wheat, all-purpose, gluten-free etc.)
1 and 1/2t tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 cup of honey
1 cup of applesauce
4 eggs
1/3 cup water
2 cups grated  organic zucchini
1 tsp lemon juice
1 cup of chopped walnuts (optional)

Preheat oven at 350 degrees. Mix dry ingredients in one bowl and wet ingredients in another. Than slowly mix dry ingredients into wet ingredients. Pour batter into 2!! bread pans and bake for 1 hour.

We always have such a lovely time on our bike rides. I was really ecstatic that we actually had some sun yesterday as the rain was getting to me. It is funny thought because Sophie always falls asleep on the bike rides...

Rain rain go away

As we are all partners in witnessing..the weather here has kind of sucked. It is sort of depressing when I wake up with a day planned of outside adventures with Sophie and it pouring. What is worse is that our backyard is a little slanted so it floods even when it barely rains (Pic above) We tried to rough it and go on a bike ride anyways..but the rain pounding in our face wasn't very delightful. I feel so bad for Sophie also because we recently weren't feeling the greatest so when it was sunny..we were indoors. So lets hope it is beautiful tomorrow so Sophie and I can go run some errands and be outside catching that vitamin D. :)
